One night recently I asked Alan what would be an interesting flavor for a chicken. We were low on groceries and when he opened the fridge he asked whether salsa would be good. I don’t know why I had never had such a delicious idea. I pulled together a few other things I had on hand and made the easiest tastiest chicken I have ever had come out of my crock pot. This chicken fell off the bones and had an amazing flavor. I thought the leftovers would be great as chicken tacos, but I had an even better idea for the leftovers. I grabbed my clean slow cooker and made this… gluten free easy chicken and sausage gumbo.
1 whole chicken sized to fit your crock pot (mine was 5 pounds)
1 16 ounce jar Garden Fresh Gourmet Jack's Special Salsa from Costco (Just called Garden Fresh Gourmet at regular grocery stores) or any salsa that contains a bit of sweetness
Do you ever find yourself with an ingredient that you bought once a while back and never used again? Before we moved into our RV, I would just let those items hide out in the backs of cabinets and linger on top of the refrigerator. Sometimes those ingredients would get lucky and I would need them for a recipe before they expired, sometimes they ended up being tossed out during spring cleaning only having been used once. Our RV is only rated to hold 1483 pounds worth of “stuff”. When I began weighing out the items in my life, I realized just how much stuff I had. Recently I picked up a huge pile of brussels sprouts on the cheap. I have been seeing recipes for kale chips posted everywhere and wondered if the tough outer brussels sprout leaves that would normally go to waste would lend themselves well to becoming a crispy snack. I bought a can of pumpkin to make the famous paleo pumpkin pancakes I had heard so much about. I tried them and for me they were way too eggy. I much prefer the two ingredient banana pancakes as far as texture and flavor. So I had most of a can of pumpkin left for experimentation. I was growing tired of eating my brownie batter paleo oats* after eating them 7 mornings in a row on our road trip. This gluten free girlfriend has been trying to get buff over the last few months. I have a lot of work to do and it is certainly an ongoing process. I have been eating a pretty high protein diet and supplementing it with protein shakes for muscle building. I don’t want to look like a bodybuilder I am just aiming for not looking like a bowl of jello in a bikini. I have tried many flavors of protein powder many tasting awful. My new favorite obsession is apples and cinnamon. I have been trying to eat even healthier and replace some of my sweets with fruit. Don’t get me wrong I still love chocolate but am trying to break my addiction to it. I have created this variation on my Copycat Coco Wheats to satisfy my breakfast sweet tooth. The use of coconut flour keeps this recipe lower carb and low calorie while being grain free and gluten free as well. Who doesn’t like apple pie for breakfast? If you want an even more decadent experience you could drizzle a bowl of this with honey or maple syrup and sprinkle some crushed almonds on top.
