One night recently I asked Alan what would be an interesting flavor for a chicken. We were low on groceries and when he opened the fridge he asked whether salsa would be good. I don’t know why I had never had such a delicious idea. I pulled together a few other things I had on hand and made the easiest tastiest chicken I have ever had come out of my crock pot. This chicken fell off the bones and had an amazing flavor. I thought the leftovers would be great as chicken tacos, but I had an even better idea for the leftovers. I grabbed my clean slow cooker and made this… gluten free easy chicken and sausage gumbo.
Do you ever find yourself with an ingredient that you bought once a while back and never used again? Before we moved into our RV, I would just let those items hide out in the backs of cabinets and linger on top of the refrigerator. Sometimes those ingredients would get lucky and I would need them for a recipe before they expired, sometimes they ended up being tossed out during spring cleaning only having been used once. Our RV is only rated to hold 1483 pounds worth of “stuff”. When I began weighing out the items in my life, I realized just how much stuff I had. I was amazed to find I had around 35 pounds of weight just in flour and another 20 pounds in spices.
I love all things ginger. I was in the mood to bake and immediately thought of making this mix as ginger snap cookies. I asked Alan if he liked ginger snaps and I was met with a resounding NO! I did not want to have the temptation of eating all of those cookies with no help, so I started the wheels turning in my head.
I have been craving cookie dough ice cream ever since I became a celiac. I finally came across some made by So Delicious. It is dairy free and gluten free and has the most incredible cookie dough chunks I have ever had! I ate the entire pint in one sitting. The pint cost about 5.50 which is way out of my price range for a pint of ice cream. I wanted to save my money and buy it again, but then I had a better idea.
Eating healthy does not have to be any more expensive than eating junk. I scored a seven pound spaghetti squash at Fresh to Frozen for 1.98 today.
Often fresh healthy vegetables and meats are way more budget friendly than snack foods, yet many people fill thier carts and cabinets with snack foods and then protest that eating healthy is too expensive.
I often shop at our local salvage grocery store. I actually enjoy picking through the slightly irregular fruits and veggies. Sure it takes longer than shopping at a chain grocer, but it is a relaxing shopping experience, a time I give to myself every week to unwind, think, and discover possibilities in foods that would otherwise have been out of my price range. I can get all of the fruits, and veggies to feed Alan and I for two weeks for around 27 dollars. That is incredibly cheap considering the high volume of produce we consume. That 27 dollars can stretch to around 35 dollars and include specialty items like cashews, gourmet chips, Mexican cheeses, and the occasional box of Pop-tarts for Alan. If you have not already checked out your local salvage grocery, it is worth the trip. Always check expiration dates and expect to only buy what you will use or freeze in the next few days to a week.
I attended the G+ Bloggers Conference on Saturday morning. In talking about how topics trend on twitter the host used an example of #meatballmondays . We all thought it was pretty funny since #meatlessmondays usually trends weekly. I decided to turn this into an opportunity to create a new recipe and test out a social media theory as well.
I always buy a rotisserie chicken on my trips to costco. The last time may be my last time though. This chicken was so dry that the poor wings were like jerky.
