5 Minute Coconut Flour Gluten Free Low Carb Muffin

Ingredients
  • 2 tbsp Coconut Secret coconut flour
  • ¼ cup applesauce
  • ¼ cup water
  • ½ tsp vanilla
  • ½ tsp homemade baking powder
  • 1 egg white
  • 2 packs Stevia (optional I don't like mine sweet and feel the applesauce is enough sweetness. Most people will want the stevia added)
  • Add ins: 1 tbsp cocoa powder + 1 pack stevia, 1 tsp cinnamon + pinch nutmeg, a few drops anise extract, ect. This recipe is fun to play with as far as flavors go and is pretty forgiving as long as you don't add too much extra liquid.
Instructions
  1. Mix all ingredients in a small bowl.
  2. Spray a coffee mug with nonstick spray. ( The taller and thinner the mug the more the muffin will rise)
  3. Pour batter into mug.
  4. Microwave for 5 minutes.
  5. Cool on a plate.
  6. Enjoy!
