Grain Free Coconut Flour Banana Bread Gluten Free and Paleo

Who doesn’t love banana bread? I confess I can eat a whole loaf in one day for breakfast, lunch, and dinner. That is not usually a healthy or diet friendly thing to do. By now you should all be aware of my obsession with coconut flour. I like it because it is healthy and allergy friendly (unless you are allergic to coconut). I started out trying to convert my ridiculously lengthily titled “The Sinfully Delicious Life Changing *108 Calorie* Coconut Flour Banana Muffin in a Mug!” into a bread. The result was tasty, but not fit for the blog. I ended up making 3 loaves with a bit of tweaking to each before I came up with this winner.
I did end up eating a whole loaf over the course of two days in the process of creating this recipe. I can’t help it I have a horrible addiction to sweet things. That’s probably why I love Alan so much! 🙂
As far as substitutions go, I do not use sugar in my recipes. I assume powdered stevia would work in place of the liquid stevia. I have not tried this bread with other fruits or types of flour either. - 1 cup banana puree
- 1 cup Nutiva coconut flour
- 12 egg whites
- ¾ cup water
- 6 droppers vanilla stevia (about 180 drops)
- ½ tsp salt
- 1 tsp homemade corn free baking powder or your favorite brand
- 4 tsp vanilla extract
- 2 tsp saigon cinnamon
- ¼ tsp nutmeg
- Beat egg whites until peaks form.
- In a mixing bowl combine all ingredients except for egg whites.
- Beat egg whites until peaks form.
- Fold egg whites into mixture just until combined.
- Pour mixture into greased bread pan.
- Bake at 375 for 45 minutes to an hour.
