Grain Free Coconut Flour Banana Bread Gluten Free and Paleo

Gluten Free Coconut Flour Banana Bread

Who doesn’t love banana bread? I confess I can eat a whole loaf in one day for breakfast, lunch, and dinner. That is not usually a healthy or diet friendly thing to do. By now you should all be aware of my obsession with coconut flour. I like it because it is healthy and allergy friendly (unless you are allergic to coconut). I started out trying to convert my ridiculously lengthily titled “The Sinfully Delicious Life Changing *108 Calorie* Coconut Flour Banana Muffin in a Mug!” into a bread. The result was tasty, but not fit for the blog. I ended up making 3 loaves with a bit of tweaking to each before I came up with this winner.

I did end up eating a whole loaf over the course of two days in the process of creating this recipe. I can’t  help it I have a horrible addiction to sweet things. That’s probably why I love Alan so much! 🙂

As far as substitutions go, I do not use sugar in my recipes. I assume powdered stevia would work in place of the liquid stevia. I have not tried this bread with other fruits or types of flour either. If you have success with alterations to this recipe please post a comment so everyone can benefit from your absolute baking genius.
