Simple Low Calorie Gluten Free Peanut Butter Icing

I love to bake. If I didn’t I probably would not be writing a food blog. I began by baking gluten free recipes I found on various sites and not worrying what the calorie content was. I ate these baked goods like they were going out of style. I watched my waist expand quickly and realized I needed to make a change. I am a sweets addict especially when it comes to chocolate. I needed to figure out my own way to incorporate my sweet tooth into a lower calorie diet. That’s when I stumbled upon the magic of coconut flour * insert coconut love post here*, PB2, and Stevia. These three items changed the way I bake radically. Now I bake single serving treats (my portion control sucks). I get to have the satisfaction of mixing ingredients without the guilt of having a whole pan to devour. I created many single serving muffins and cakes. I needed something sweet to top them with and after many failed attempts using applesauce, bananas, ect., I settled on this delicious peanut butter icing.  This is not a sugar laden calorie filled icing. If that is what you are looking for other recipes may suit you better. I created this super easy super tasty super low calorie icing for my single serving Best Coconut Flour Chocolate Mug Cake Ever!. This tastes wildly sinful but will not kill your diet. This icing whips up in a less than a minute. Now you can have a yummy low carb treat even when you  are in a rush (or for breakfast).   1. Mix together and enjoy on top of my chocolate mug cake.
  2. Recipe can easily be doubled tripled or made in any other multiple!
