My sweetheart Alan is a salsa and corn chips addict! We go through  a ton of Pace in this apartment. A few days ago we were out thrifting with my aunt when she asked if we wanted to see her garden. I had eaten many veggies from it but never visited. I assumed it was at her house, boy was I in for a nifty surprise.  When we turned down a gravel alleyway I was  greeted by multiple garden plots in a place I never expected them. Apparently the county rents out these spaces for gardening on an income based scale. I had never even known such a system existed. What a great idea!

She gave us a ton of kale and collards. We also ended up with more chives than I knew what to do with. When I realized I had some tomatoes that really needed using up I had a brilliant idea, fresh homemade tomato and chive salsa. The chives are not something I would usually think of for a salsa, but  Alan despises cilantro (a salsa stape). I chopped everything up added some lime juice and salt and this salsa was born. Alan’s face lit up when he tasted it. He said if I made this salsa regularly we could finally quit buying the jarred stuff. I see that as a major accomplishment and a rave review! Eating healthier doesn’t have to be hard it just takes creativity and an open mind.

Ingredients
  • 3 Roma tomatoes diced
  • About 1'2 cup fresh chives chopped
  • 3 squirts lime juice
  • ¼ ot ½ tsp kosher salt to taste
Instructions
  1. Dice tomatoes and toss in bowl.
  2. Dice chives and add to tomatoes.
  3. Squeeze about 3 good squirts of lime juice into bowl.
  4. Add salt ¼ tsp to start then more to taste depending on how salty you like things.
  5. Let sit at least 10 minutes covered in refrigerator for flavors to meld.
  6. Eat with your favorite chips or veggies!
