Gluten Free Roasted Broccoli with Bacon

Gluten Free Roasted Broccoli with Bacon

This is a quick bacon filled entree or side dish that you can prep anytime and throw in the oven for a quick super delicious meal.
Serves: 2 to 4
  • 2 heads of broccoli
  • 1 red bell pepper
  • 1 small onion (optional)
  • 5 cloves Minced Garlic (I used the kind in a jar)
  • 8 slices bacon
  • 2 tbsp olive oil
  • Salt
  • Pepper
  • Gallon size ziplock bag
  • Parchment paper (Aluminum foil will work too)
  • Large cookie sheet (or a couple smaller ones)
  1. Cut broccoli into long florets(You want the stems in this recipe they turn out tender and delicious). The easiest way to do this is to stick your knife between two florets and cut down the broccoli lengthwise.
  2. Cut the bacon into bite sized pieces.
  3. Roughly chop the red pepper into bite sized chunks
  4. If using onion; Peel, cut off both ends, and slice from top to bottom a few times. Then separate the pieces.
  5. Toss everything into your ziplock with the garlic and shake until mixed.
  6. Preheat your oven to 400 degrees.
  7. Add your olive oil, a generous amount of salt, and pepper to the ziplock bag.
  8. Line your cookie sheet(s) with parchment paper or foil.
  9. Dump the contents of your ziplok onto the tray(s) making sure it all fits in one layer not over lapping(or the broccoli won't brown right and the bacon wont cook. If using two cookie sheets make sure they fit in your oven side by side.
  10. Oven roast the broccoli for 30 to 40 minutes flippping the contents every 10 minutes and rotating the tray. The end results should leave your broccoli browned your bacon crunchy. If your bacon is not crunchy enough use tongs to remove the veggies and cook the bacon longer. then toss everything back together.
  11. You could experiment with sprinkling lemon juice, vinegar, or parmesan cheese on this dish. I like it so well by itself that I have never needed anything extra though.
