I love coconut flour. I bake with it as often as I can and eat it at least once every day. Some people would call me obsessed. Low calorie, high protein, low carb, high fiber, this flour has amazing benefits! What’s not to love? I have tried my fair share of coconut flour recipes from other food bloggers. Most worked out fantastically, but some flopped. After reading a bajillion comments on those recipes the common consensus was that the brand of flour may be the reason for the recipe failure. I have been craving cookie dough ice cream ever since I became a celiac. I finally came across some made by So Delicious. It is dairy free and gluten free and has the most incredible cookie dough chunks I have ever had! I ate the entire pint in one sitting. The pint cost about 5.50 which is way out of my price range for a pint of ice cream. I wanted to save my money and buy it again, but then I had a better idea. Continue reading
I love Thai food! Chicken Satay has always been a favorite of mine. I especially love the peanut butter sauce that comes along with it. They seriously never bring me enough of it. - 1 can chickpeas
- 2 tbsp cocoa powder
- ⅓ cup sugar
- ⅛ tsp baking soda
- ⅛ tsp salt
- 1 banana
- 2 tbsp almond butter
- 3 tsp vanilla extract
- Drain chickpeas and toss in food processor.
- Peel banana and microwave in a bowl until it is liquidy gooey. A minute worked for me.
- Blend all ingredients in food processor until smooth. (My blender worked but it was hard on the appliance.)
- Eat alone or as a dip!
