One night recently I asked Alan what would be an interesting flavor for a chicken. We were low on groceries and when he opened the fridge he asked whether salsa would be good. I don’t know why I had never had such a delicious idea. I pulled together a few other things I had on hand and made the easiest tastiest chicken I have ever had come out of my crock pot. This chicken fell off the bones and had an amazing flavor. I thought the leftovers would be great as chicken tacos, but I had an even better idea for the leftovers. I grabbed my clean slow cooker and made this… gluten free easy chicken and sausage gumbo.
I love soup. It is a quick, warm, yummy way to pack a lot of nutritious veggies into one satisfying meal. When I went gluten free I quickly realized that most canned soups were off limits to me. The few brands that were gluten free were wildly expensive or did not have many flavor choices. Canned soups also pack in way too much sodium and other unnecessary additives. This image is a stock photo. It is not chicken stock or beef stock. It is simply an image I had to pull from the interweb because I got hungry and ate all the stew. No, I did not save you any, sorry. I promise to take photos of my beef stew next time I make it. Until then you get to see this pretty photo which actually looks like my beef stew but with a much better food photographer behind the camera. I can’t seem to make my food look as tempting in photos as it does in real life. Anybody have some tips?
