Gluten Free Banana Muffin

This muffin is a life changer! It is a whoa let me stop everything and sit down and savor this kind of muffin. Along with being the best thing I’ve ever eaten for breakfast, it is full of protein and fiber (coconut flour rocks!). Just one keeps me full until a late lunch, but go ahead… have two because at 108 calories a piece you can afford it.

Ingredients
  • 2 tbsp coconut flour
  • 2 tbsp banana puree
  • 3 tbsp black coffee (can use water just won't be as rich)
  • ½ tsp baking powder (aluminum free)
  • 1 egg white
  • 1 tsp vanilla extract
  • 1 tsp saigon cinnamon (regular will work you may need to add more though)
  • Itty bitty smidgen salt (Really just a few grains. Probably 1/32 of a tsp or less but no spoons go that small)

Instructions
  1. Puree banana or mash it really really smooth.
  2. Mix all ingredients together in a bowl.
  3. Spray a mug with nonstick spray and pour in your batter.
  4. Microwave for 5 minutes.
  5. Turn muffin out onto a plate.
  6. If muffin looks too wet microwave on plate for 30 to 45 seconds.
  7. Eat. Savor. Enjoy. Thank me later. 🙂

Wow- surprisingly yummy! perfect snack/breakfast and delicious with just a bit of almond butter on it too! thanks for sharing! Mine was done in about 4 minutes – guess microwave wattages is diff than yours? How is the best way to tell if the microwave muffin/cake recipes you have listed are finished cooking? thx!

They are so great! We love ’em for snack, lunch, dinner, breakfast, sometime in between, all day. They are awesome! Made them with and without backing powder, both great. Love ’em best warm, but with a little extra moisture they are great the next they in my lunch box! Awesome! Keep it coming! We want more!

I made this muffin for breakfast this morning except I used applesauce instead of an egg white bc I’m vegan and it turned out pretty good actually, the moistness was there just infused with that apple and cinnamon flavor. It was delightful, I recommend! Anyway thank u for this Recipe!

Because of what the microwave process does to, and takes out of food nutrients, I only use a convection oven and wonder what the baking time and temp would be for a batch of these? Have you tried baking this recipe any other way? Thank you.

    My banana bread recipe is adapted from these muffins and can be made in the oven. I am actually limiting my use of the microwave now as well. I am converting my home (I live in an RV) to solar power and can not run a microwave off of solar. I will be trying many of my recipes in the oven and adding cooking times as I get to them.

Thanks for this recipe!
Instead of the coffee, I added one tablespoon of cacao powder and two tablespoons of water (if you have a reeeaal sweet tooth, I suppose you could add some stevia – I’ll try that next time). Only need to microwave mine for 3.5-4mins, and then ate this with raspberries!
